Zesty Summer Salads – ideas for lunchbox & BBQ season

With the summer bbq season coming up wanted to give you some interesting salads that are packed full of flavour and nutritious ingredients – healthy salads do not have to be boring or dull, addition of herbs and dressings make these zesty and delicious! These are also great additions to your lunch box – creating deli style salads at home is the much cheaper option than buying your lunch out and about.

Refreshing cucumber salad

1 cucumber chopped

1 red onion finely chopped

1 can of chickpeas – drained

Juice of 1 lime

Salt & pepper

Splash of olive oil

Handful of corriander chopped

Crumbled Feta for the top (optional leave out if making vegan)



Crunchy Slaw with a twist

1/2 head of white cabbage shredded finely

Big Handful of parsley chopped

Splash of olive oil

Handful of grated parmesan (optional – leave out if making vegan)

Juice of 1 lemon

Chilli flakes (optional)



Cauliflower rice medley

1 Cauliflower – broken into florets and blitzed in the blender until resembles rice consistency – Steam for 5 mins

Then fry 1 red onion & 1 red pepper in a little coconut oil for 5-8 mins, once cooked add to the cauliflower with chopped sun-dried tomatoes (about 6), chopped gherkins (about 4-6), big handful of mint leaves chopped and salt & pepper, splash of olive oil and juice of 1/2 lemon
