This is my go to breakfast on the weekend – quick and easy to make and keep you fuelled for ages! It’s nice to have something different from the usual week day breakfast. Experiment with the toppings and find the ones you like, my favourites include: Seeds, plain yogurt, almond butter and pecan nuts
Unlike the usual pancake mix which contains flour & milk this is a no flour option using oats instead which help keep your energy levels stable and wont spike your blood sugars – topping with protein/healthy fat toppings such as nuts and seeds will also help fuel you and the pancakes are cooked in a little coconut oil.
The pancake mix is a combination of 3 ingredients: mashed banana, oats and egg
If banana isnt your thing you can replace this with some stewed apple
Options: Add cinammon if you like the favour and 2 teaspoons of chia seeds into the mix for an extra dose of goodness
You will need:
2 mashed banana (ripe is best – if you dont like banana then use stewed apple instead)
1⁄2 teaspoon of cinnamon (optional)
Combine in a bowl
Then add 1 1⁄2 cups of chunky oats and a splash of milk if the consistency looks too thick.
Heat the pan with a little coconut oil and fry in batches, these are quick to cook and you can top with yogurt, seeds, fruit, almond butter for a fantastic weekend breakfast.
Serve with your favourite cuppa – mine is Rooibos tea which is non caffeinated and delicious!
